Craziest hood exhaust ever

Im at a restaurant today and was looking at this exhaust and wondering how in the world can I clean this. the are no access panels on the sides to reach the fan.

I can only shake my head on what people are thinking when they design these things. Definitely not friendly for the cleaner.
